Monkey Bread

Monkey Bread Recipe


Ingredients

 

1/2 cup granulated sugar


1 teaspoon cinnamon


2 (16.3 ounce) cans Pillsbury Grands!


1/2 cup chopped walnuts (optional) and or  1/2 cup raisins (optional)                  

 

 

1 cup  brown sugar


3/4 cup butter, melted
 
*I have also added a package of cream cheese, cut into small squares and wrapped inside the biscuits! Perfect for a small group.

Directions

  1. Heat oven to 350 degrees F. Lightly grease 12-cup fluted tube pan with shortening or cooking spray. In large -storage plastic food bag, mix granulated sugar and cinnamon.
  2. Separate dough into 16 biscuits; cut each into quarters. Shake in bag to coat. Arrange in pan, adding walnuts and raisins among the biscuit.
  3. In  bowl, mix brown sugar and butter; pour over biscuits.
  4. Bake 20 to 32 minutes or until golden brown. Cool in pan 10 minutes. Turn upside down onto serving plate; pull apart to serve. Serve warm.

   I am a huge fanatic of taking things off of Pinterest and recreating them . Well most of the time I am successful there's always those bloopers! I have learned to stay clear of ideas/recipes that seemed  far too easy.
 I'm here to say the isn't the case on this crock pot Carmel. I have seen this idea floating around now for  sometime and haven't got time to get around to it and try it. During the holidays I decided we could give it a shot.  And let me tell you. It's a keeper and so  easy!
*One can of Sweetened Condensed milk
 
*One crockpot
* Paper towel 
Direction: Rip off 2 full sheets of paper towel, fold over and place at the bottom of the crockpot. Take one can of sweetened condensed milk and place it on top of the paper towels.  This keeps the can from rusting to the bottom of the crockpot. Slowly pour water into crockpot until water is covering the top of the can. Cook for 6-8 hrs on low and BAM you have yourself Carmel topping.
 
 Great with ice cream, in coffee and our personal favorite stir spoons with Mediterranean sea salt.

Homemade Enchilada Sauce Recipe


                                               Easy Enchilada Sauce
 
Around this house we love us some Mexican food! We live in a state that truly have some amazing Mexican food, so when it comes time to making it at home, the bar is set high! Lucky enough for us we have a super easy homemade enchilada sauce to share! If you have never made your own enchilada sauce it's super easy and delicious. After making this you will never go back to "can of chemical sauce" again. 

Ingredients


  • 3 tablespoons vegetable oil
  • 1 tablespoon flour
  • 1/4 cup chili powder
  • 2 cups chicken stock 
  • 10 ounces tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 cup water ( for thinning depending on taste)

Directions

In a medium saucepan heat oil & add flour. Stir and cook 1 minute. Add chili powder and cook for  an additional 30 sec. Add stock, tomato paste, oregano, and cumin. Stir to combine. Bring to a boil, lower heat and cook for  additional 15 minutes. The sauce will thicken and smooth out. Add water slowly to thin. 
 

Every year my family picks  a theme and we gift around that theme. Last year was Mexican food! My husband and I decided to make everyone homemade enchilada sauce in a mason jar. It was a huge hit and I was asked time and time again for the recipe. It made for a very special gift. I also make this in large batches for our freezer meal enchiladas. Post on freezer meals coming soon ;)

Cream cheese wontons

 Cream cheese wontons.
 
Ingredients:
2 cups of flour
1 whole large egg
1/3 cup water
1/2 teaspoon salt
1 8oz block of cream cheese
Pickled jalapenos (optional)
Directions:
Wonton wrappers:
In stand up mixer combine flour and salt. In a separate bowl whisk together egg and water.
Place dough hook on mixer and place on low, slowly add the egg and water mixture to the flour. 
Mix on low for 5 minutes. If the flour does not come together to a ball add water, 1 teaspoon at a time until dough combines.
 
Let dough rest covered for 10 minutes.
After 10 minutes remove dough and place on a smooth lightly floured surface Begin pressing the dough out into a smooth flat circle. Grab your rolling pin and begin rolling flat you want to give it 1/16th to a 1/4 inch thickness depending on how you like your wontons.
After you have rolled out your wontons use a small 31/2 inch by 3 1/2 inch square's. (That's okay if you have scraps use them to make those delicious wonton crisps that come with the Chinese soups.)
http://4cupsoflove.blogspot.com/If you are using jalapenos in your recipe remove them from the jar and pat dry so it does not make the dough raw. Place a couple of jalapeño in middle of the wonton dough square, take a 1/2 tsp of your cream cheese that has come to room temperature and place it on top of the jalapeno. Then grabbing the corners hold them together the top and pinch them so the cream cheese does not float to the top when you fry. You can use either a deep fryer or a hot pot of oil to deep fry in. We use an electric deep fryer. Set the temperature to 375 degrees and Fry for about 5 to 7 minutes until golden brown depending on thickness of the dough.
After frying remove oil and let dry on some paper towels.
